Restaurants are not always that best place to have something that takes care to prepare. I imagine calamari doesn’t get ordered a whole lot, so when it is, it’s already past it’s prime. IMHO anyways.

You should always soak your calamari in milk before preparing/cooking to tenderize it.

Yes.Everyone does.It goes from raw, to done, to rubber in a flash.The best way to eat squid is right out of the skillet.

I only eat flaked white tuna in water (or light oil) or halibut, paddock or cod which is dipped in a beer batter, fried up, and served in kraft paper.

Inlaws Norwegian, thus cod & lutefisk (spelling) which they soak in lye and hang up on a line. Horrible infiniti.Meatballs are good, though.
