    southern cooking is influenced by a lot of cultures; African, French, Spanish, Scots-Irish, English. The further south you go, the more influences. That’s why New Orleans has such great food.

    As long as you incorporate the 4 important Southern cooking food groups in your meals, then you’re O.K. They are: Grits, Grease, Gravy, and Greens. The 5th one, the ugly step-child, so-to-speak, but equally treasured, is Sugar !
