Did you ever read the ingredients in any commercial-brand pork Chorizo sausage? They’re all the same - “Pork (Salivary Glands, Lymph Nodes, Cheek Meat)”, then assorted spices, etc. I love the stuff, but I try not to think about what I’m eating…
