The extra “air” (usually nitrogen) is to make the bag puffy so that the chips don’t get crushed when the bag is jammed into the grocery bag. Cheaper brands typically use much less “air padding”. That said, I usually like the cheaper brands.

I’ll second that. Really—who wants 1/3 chips and 2/3 air?
