I had a great-aunt who once had a similar reaction to medication. She said she saw a lady standing in the room. “I know she’s not there and you know she’s not there, but I see her anyway.”
I am beginning to suspect that the animals are really there. Whenever Walt mentions them, Gertie refuses to look. Eventually, someone else other than Walt will see the animals - and mention them to Gertie.

I think the animals and birds are real. They just move away when Gertie is around. Perhaps someone left the gate to the zoo open?
