Water is a diatomic molecule, but its structure is different that other such molecules. Others have no bend at all (180°), but water (according to my Google search just now!) has a bend of anywhere between about 104° and 110°. That bend difference makes a world of difference in how water behaves. [I was always told that the angle was 104°, but others say otherwise! I’ll let the experts chime in here…]
