I never eat soup, stew or chili till the following day. Adam is correct the flavors need to meld together. Alton Brown even advocates making sandwiches the day before and they do taste better.

Everyone knows the flavors need to marry! You can’t eat flavors out of wedlock! It’s unseemly!

Not sure on this. However I am leaning to not stalling because Adams game face is too readable. and I am not seeing the “Uh oh look”

The best chili always sits overnight in the refrigerator, the flavors really get into the touchey feelie there in the fridge.

Yep—chili, like many foods, are better the next day, after they have a chance to mellow.
