    I prefer my braised pheasant with a choice of dippin’ sauces - hot ‘n’ spicy, cool ranch, or marinara.

    VOLAILLES - (poultry) Breast of Natural Chicken in a sauce of Porcini Mushrooms and Truffles, garnished with Lobster Roasted Duckling or Braised Pheasant with Fresh Pears, Orange Sauce and Scalloped Potatoes Semi-Boneless Roasted Quail with Sautéed Mushrooms and Muscat Wine.

    (As served at “The Old Warsaw” restaurant. Possibly Charles hasn’t tried it yet…)

    Well, I have to admit - the “Old Warsaw” restaurant IS in Texas, home of fine chili and other gourmet foods. I have also cooked many pheasant over the years, but not once by braising. They’re a very lean, dry meat, and need some type of moisture for best results, though.

    shytimes: My dad had a sister Vera as well, and no brothers! Are you…my lost sister?!? GASP!

    My relations on my dad’s side (more specifically, my dad’s mother’s side) hailed from Pomerania, ethnically German even though it’s now within Poland’s borders. I’ve undoubtedly got some Polish back there somewhere…
