Well, I have to admit - the âOld Warsawâ restaurant IS in Texas, home of fine chili and other gourmet foods.
I have also cooked many pheasant over the years, but not once by braising. Theyâre a very lean, dry meat, and need some type of moisture for best results, though.

I prefer my braised pheasant with a choice of dippinâ sauces - hot ânâ spicy, cool ranch, or marinara.
