There is a genuine increase in celiac disease, but many people are going gluten free because it is a fad. First of all there are nutrients in wheat that normal people need, and going GF can make you sick. Second GF foods are generally much higher in calories, and therefore tend to be fattening. Don’t do it just because “my neighbor stopped eating gluten and he feels great”. Maybe your neighbor just started taking insulin and he feels great, too, but that no reason for you to do it.
