Trichinosis was eliminated long ago in western Europe. “Rare” pork is a common option, which I first encountered on a visit to Germany in 1982.

The parasite could be eliminated in the US, too, if the USDA required and enforced the measures necessary to do so. But American farm lobbyists consider that to be “unreasonable” regulation and “too expensive”, even though they spend huge amounts on hormones… and antibiotics against other diseases.
