From Google: In the restaurant industry, the term “cover” refers to a diner who eats or a meal that is served. A cover differs from a table in that it represents only one of the meals served at that table. It differs from a dish in that it includes the extras that a diner orders, such as drinks, appetizers and desserts.

Blonde, brown, blonde? Anyone want to guess what color Mary Lou’s hair will be tomorrow?

maybe it’s some kind of inside joke … a character at random is made blonde. Gene, Mary Lou, who’s next?

Maybe her hair color depends on the lighting. It glistens blonde in the light but has brown undertones that are prominent in the shade.

MaryLou needs to settle down. The cafe is not breaking any records and using family for labor will bite her in the arse.

It seems to me that Gus has been looking older and older in the last year or so…

I don’t get why “Gus” feels “57 covers” (meals served?) is negative? I can’t figure out either character’s motivation for what they’re saying here.
