I figure if I have mixed nuts, and it calls for one kind, I just use what I have. Toss them into a food processor, and once they’re chopped smaller, it’s hard to tell them apart anyhow. So the recipe gets 1/2 of nuts, diced, that’s what it gets, nuts.

For the longest time, The Nut House in Old Town was the go to for roasted hazel nuts, too bad they closed.
