tossed crust is for show, a good tomato pie is rolled flat and thin so it does not rise in the oven and forms a matzo like crust. Tossing puts too much air in the dough and allows it to rise in the oven as the leaven is activated.
My favorite crust (sixty years ago) was rolled thin, placed in pizza oven long enough to show bubbles, taken out and re-rolled. This gives a CRISP crust. Mmmmmm GOOD!
