    I have a thyroid condition that disallows anything soy based in my diet. Tofu and soy sauce are both soy based. Soy meat extenders are in almost every processed meat on the market {Thank Heaven for Hebrew National} and every can of food that comes into the house has been prescreened for ingredients, remember lecithin is derived from soy. It is a very sneaky food additive.

    It’s an absorbent food with little taste of it’s own that takes on the flavor of whatever you cook it in. It’s high in protein and contains no fat. What’s not to like? If you don’t like it, you’re preparing it wrong.

    Tofu is great in the right Thai dish. Takes on all the flavors and a great substitute for going meatless.
