Just rinse and give the potatoes a light scrubbing to remove any residual dirt. Don’t remove the skins, they are actually quite tasty, and full of nutritional benefits. I’’ll bake them whole, then cut them and top with melting butter, or I’ll cut them into chunks, top them with various seasonings, and then roast them. Either way they are delicious.
