Janis was ready to “Hit the ground running”. Arlo, however, needed a day or two to ramp up speed and eliminate unnecessary motions. It takes some serious talent to time everything!
We ate in a crowded breakfast joint once, down south, where the grill cook was literally singing, and spreading joy and good vibes as he slung eggs and home fries nonstop for the hour we were there. Needless to say, we very much enjoyed our meal, tipped the waitress well, and sent a tip back to the grill cook also.
Anyone who has planned, prepped and cooked a meal for themselves knows what it takes to produce a quality product. Now think of doing the same process with several variations and orders included.
Unless your order is processed foods coming off of an assembly line, you are getting a bargain if it is nutritious, edible and tasty.

Better ‘one thing at the time’ than ‘all things to all people’.

I am soooo glad I am not in the restaurant business any more. Many years later and I still have nightmares about it.

After watching some of the chef shows on Food Network, etc, I can’t imagine anyone who would want to be in the restaurant business.

When you have a nose like Arlo’s, it is hard to see the big picture.

Why would Arlo do the cooking? That should be Gene’s job.
