Roast it with a lot of other vegetables and protein. A fat transfer device. But you get some bragging rights. They crisp up faster so perhaps later in the process.
You can rub it with lemon juice to soften it for salad. Find a recipe for ribollita, an Italian bean soup with kale in it. Or my favorite, cut it into 1.5" squares, coat with olive oil, sprinkle with seasonings, and bake it at 400 degrees F 7-8 minutes per side to make kale chips.
