In college, one of my more eccentric art professors invited his senior students to a pig roast. Ignoring his frowning wife, he dug a pit in his backyard, and things got underway. It took hours longer than he expected. Spirits were plentiful, and I really don’t remember much after that.

Hmm, I’ve never had a carnita! (So I grew up in the Northeast, long before lots of guest workers came up from Mexico).

Siempre que voy a coprar tacos de carnitas pido uno de higado, oreja o riñón. Lamentablemente para mi, pocos lugares tienen esas partes del puerco.
