“Witch” has many very different meanings. It could mean “medium” as in the “witch of Endor”. It could mean “satanist” as in dealing with demons. But this kind of “witch” is an “alchemist” - a kind of early sci-fi like in Harry Potter.
Much of the magic of alchemy has been realized by modern science, from pages with moving pictures (e-paper) to transmuting elements. However, no one has invented a levitating personal transportation device as compact as the witches broom. Yet.

Witches prefer brooms because, basically, on the whole, vaccuums suck. Besides no one wants to live in a vaccum.
