Meanwhile… I prefer the yellower squashes to the greener ones, maybe because they’re less squishy, even the yellow summer squashes, the ones I have to pretend are little geese.
Peter’s dish was made green by the colorist, but a mound on a plate is probably a scoop of yellow winter squash…. even sturdier and starchier… no squish.
That said… I eat it all, even zucchini, and its grey-green cousins, and the ones shaped like pudgy little green or yellow flowers.

Even Zucchini?
Zucchini usually are middle to darkish green and yummy, yellow ones taste different, and so do the pale-green ones.
They have to be firm and juicy, anything else tends to taste bitter.
I think I’ll make ratatouille today again. And zucchini in bechamel with cheese one of the next days. Fricot is nice, too. Or Korean style. Or filled.
The flower-like squash is called patisson and available in white, too.

Grated and drained zucchini is a good substitute for crab meat – if you are allergic, Kosher or vegetarian it comes in handy.
