    Once many years ago, I was helping in the kitchen as a church supper. I pulled the rack partway out of the oven to remove a meatloaf, when the rack just folded down and the pan slid to the floor. (It had been put in upside down.) I stood there thunderstruck, while one of the men reached past me, shoved a pancake turner under the meatloaf, flipped in onto a serving platter and handed it to me. “It fell on a clean napkin.” I marched into the dining room and put it on the table
