Christmas was a Christian overlay of the Winter Solstice Festival known in northern Europe as Yule. They did this to try to get the Pagans to fall line and convert to Christianity after it was made the official religion of The Roman Empire. Constantine I, issued the Edict of Milan in 313 CE legalizing Christian worship, which before that had been illegal because it refused to see the Emperor as a God.
Christianity before this focused fully on the ritual of Communion and the Resurrection of Jesus at Easter.
The term Happy Holidays does include Christmas not exclude it. It just doesn’t give Christmas ranking above other religion’s holidays.

I’ve known Christians to avoid saying “Christmas” in a misguided attempt to avoid causing offense. I’ve never known a non-Christian to actually be offended by it’s use, certainly I’m not offended by it and I’ve been Jesus-free for nearly 20 years now.
In my experience there are about equal numbers of people offended by the word “Christmas” as there are offended by the refusal to say “Christmas”.
As for me, I don’t believe in magic words, and the “Christ” part of Christmas means as little as the “Thor” part of Thursday.
We all need a Winter Solstice Celebration of Light and Good Will, regardless of our beliefs–or non-beliefs. Enjoy the holiday of your choice, regardless of what anyone calls it or doesn’t call it.
Christmas has become just a way for stores to increase sales and people to get stressed out. It isn’t even the time of year Jesus was born much less the day. I will say Merry Christmas or happy whatever to any other holiday as a respect to those celebrating. Christ is in my world and heart every day of the year. So - Merry Christmas everyone!
