After penny pinching to the nth degree in grad school and eating way too many 15 cent boxes of the ugly orange Mac and ‘cheese’, I occasionally enjoyed a good made from scratch with actual cheese Mac and cheese. Now in my senior years I have developed gluten intolerance and lactose problems which means if I did try to make it again it would be with gf pasta (yes, some types are OK) but I have yet to find a decent non-dairy ‘cheese’. Oh well.
My parents are from the south, so Mac and Cheese, is usually called Cheese Macaroni. It’s started like mac and cheese and usually baked. Sharp cheder and sometimes Provolone cheese, are added. I think that would take care of that pesky, creamy, problem!
Bulk it up with cut up hotdogs. Classy. Maybe some smoked Paprika if your dining by candlelight. A sweet Australian Shiraz blend might pair well. While dessert is on you, I’d think something with chocolate sprinkles might be a start. Or in entirety.
Mac & Cheese is my comfort food. The way I make it, it is not too creamy and not too dry. I once took it to a potluck at work and one young person was so surprised. She didn’t know you could ‘make’ mac & cheese ~ she thought it just came frozen or from a box.
Everybody seems to have their own version of Mac & Cheese (kind of like potato salad). Mine came from my Grandmother who grew up in Wisconsin. Not as creamy but somewhat chunky I’d say. Cooked macaroni (al dente) with cubed cheddar mixed in layers with a bit of butter on each layer, then canned milk added.
My mother didn’t like cheese. I didn’t have cheese when I was a kid at all (much less mac and cheese). It’s sad, when you think of it. I am now making up for lost time and reveling in cheese, any kind, any way. When a pizzeria opened in our town we always ordered it without cheese. They got to know us pretty well.
