Dry Zucchini slices on paper towels, dip in beaten egg, coat with flour seasoned to your taste, fry. Or stir fry plain zucchini with onion, green pepper, perhaps some bacon. Add tomatoes if you wish. Zucchini is as versatile as the cook. Ratatouille uses zucchini and eggplant, and a few other things. Add enough sugar and pectin, I’m sure you could make zucchini jam, though I’ve never tried it.

Also, putting chocolate chips in the batter makes the bread even better, doesn’t affect it as it bakes.

Seriously, thought, I love zucchini! And some good recipe ideas posted here today. Another good way, bread, fry and serve with marinara sauce.

Grate 1 or 2 small zucchinis and saute in butter until most of the water is gone. Remove from the pan.
Saute some mushrooms in butter (chanterelles if you are really lucky) until they are almost dry. Remove from the pan.
Put in a couple of beaten eggs and add back the zucchinis, mushrooms and some sharp cheddar cheese. Cook to your liking. (I add a little cayenne pepper to the mix.)
