    Honeymooners, eh ?Tabasco ( brand ) would probably last a lot longer than any of my hot sauces, since I don’t care for the flavor. At my old house, I probably had about 30 different bottle of hot sauces in either my cupboard or fridge. Dave’s Insanity being one of my favorites. I’m still experimenting, trying to find good ones, down here in Ecuador. Meantime my 16 oz. container of Badia Cayenne Pepper is getting a good workout.

    I went to a little shop in Salt Lake called “Pretty F’ing Hot” that sells only hot sauces. I bought a bottle of ghost pepper sauce there that I haven’t worked up the nerve to open yet.

    Yeah, I was wondering just the other day how old my bottle of Tabasco is. (But not as old as some of my decades-old spices. I figure if they’re still aromatic when you rub them between your fingers, they’re still good.)

    You would get a tiny bottle of Tabasco in the MREs (Meals Rejected by Ethiopians) when out in the field. That was about the only thing that could make the ham and eggs breakfast meal edible… It was used on everything except the cookies and hot chocolate drink!

    Tabasco is okay when it’s new, but gets vinegary as it gets older. I prefer Denny’s (Restaurant) hot sauce. It’s a Louisiana hot sauce that’s not very hot, but has a very good taste. Dave’s Insanity is insane. That is something that lasts for years in my house. We also have about 30 different bottles, mostly Melinda’s XXXX hot, ghost pepper sauce and a bunch of others you can buy online.

    We make a great salsa – took about 5 years to perfect the recipe….uses 50 habaneros….100 jalapenos, bunch of serranos, etc. with 50 cloves of garlic, 6 onions, etc. It’s HOT and addictive!

    The bottle in my cupboard has been there for years. The only time I use it is a few drops in homemade chili, which I only make a couple of times a year!

    One of the reasons some of my favorite bottles hot sauces last longer than others is that I use them judiciously and in small amounts to enhance not over-power what I am cooking, So Dave’s Insanity, Death Wish and other favorites are like Brylcreem – a little dab will do ya.I use a lot of fresh peppers in all my cooking. There is a good variety of hot ones available here in Ecuador. I found a small Peruvian pepper that would make a scotch bonnet seem mild !The more you eat hot peppers, the more tolerance you build up to the heat.

    I have no idea how many bottles of Rooster sauce we’ve purchased. Perhaps that’s one of the secrets to a long and happy marriage, not keeping track! :-)
