Tia Carmen: When I was small, we sometimes had pork for thanksgiving. Gracie: Pork? Why? was it an old Bermudez tradition? Tia Carmen: No... Tia Carmen: The turkeys on our farm were hard to catch.
Not Hispanic here, but my mom used to have fresh beef liver for Thanksgiving. They raised turkeys and were THANKFUL not to have to eat it on that day! :o)
First, Bermúdez is not necessarily tía Carmen’s last name, it’s her nephew Sergio’s; second,Thanksgiving day doesn’t mean beans for Mexicans, there were no Pilgrims or Plymouth Rock there; third, Mexicans hardly eat pork.
I’m not “Mexican” or even Hispanic, but it is a New Mexican tradition to share tamales and posole for holiday feasts. I already have a pot of posole cooking for Thanksgiving.

What you eat is not as important as who you’re eating with.
