When I lived in the south, we called chicken “yard bird”. Makes me think “city chicken” might be pigeon? Road kill was a whole different category!
City chicken is chunks (like in – parts is parts) of chicken on an skewer. I don’t recall any specific method of preparation for the “chicken”.
City chicken is usually pork, put on a skewer to vaguely resemble a drumstick. I looked it up once when I saw a package in the store labeled “city chicken” that clearly didn’t contain chicken.

In Puerto Rico the invasive species of the iguana has been called, “la gallina de palo” or tree chicken.
