Another advantage of living in the country….We get our milk from a local farmer. Small shed in his yard has fresh milk (cream on top), fresh eggs, and homemade butter. Honor system…..you don’t get that in the city!
Goats milk has much less fat than milk from cows, which is one of the reasons why goats milk doesn’t need to be homogenized.
Milk is a product that contains a lot of nutrients and proteins. For many years, a farming family with a goat could always count on food even when crops were poor.
In order to digest milk, a human being needs to produce the enzyme ‘lactase’ to break down the double milk sugar in milk (lactose). The ability of humans to produce lactase used to decline over time unless the adult continued to drink milk, but there is some evidence that this is an evolving condition and people are increasingly able to produce lactase. Those who can’t are sometimes called lactose intolerant.
Cheese and butter are products originally created from milk to ensure food for adults who couldn’t drink milk.
I’m not with a milk industry; I have a digestive disorder (Crohn’s) that is fairly aggressive in my family, and have only a limited number of things that I can eat. I can tolerate goat’s milk cheese. Back when I had my first bout of Crohn’s, at age 6 months, the only thing I could tolerate was soy milk.
Goat’s milk used to be used for a greater variety of cheeses, but now isn’t. I miss all the great cheeses I used to be able to eat.
I’ve never been able to drink a glass of cow’s milk. Tastes bitter to me…
Not true, monkeys will drink milk from the animal, or store container-, many baby mammals have been given milk from other animals, even in the wild, sometimes a mother with milk will allow a different specis to nurse. cats, dogs sheep-goats, etc.

2% milk is white colored water. You might just as well be drinking water instead. My opinion after trying some.

How do you know when skim milk goes bad? Does it taste good?
