Hate to break it to you, but humans have evolved to be omnivores, not vegetarians. Second, the cattle we have today, have been breed (i.e. evolved) to live off corn, silage, hay, etc. over the winter instead of starving any using-up stored fat. Also, the grains we eat have been bred (i.e. evolved) to their current form from “natural”, lower nutrition, harder to grow, lower yielding, etc. crops
If I recall correctly, Scripture states that we were given permission to eat meat after the Flood, since the chemical balance of the earth was alteed because of the Flood. Also, in the New Testament, after Peter had agonized about eating the with the Gentiles, Jesus had spoke to him, basically stating that all he had created, he made clean to eat.
All things in moderation….
Red meat is not bad for you…green fuzzy meat is.
We didn’t get to the top of the food chain to eat carrots.

And bad Bible reading. The Scripture has always allowed the eating oaf meats, just not certain ones like lobster, with high Cholesterol or Pork with worms Tricanosis (sic). Everything god forbid had a solid health reason. Paul later says he opened the door for everything. Paul also said anyone who tells you not to follow a diet related to religion is no longer to be trusted. And it was PETER who God gave the eating revelation to. Read ACTS!!!
