Pour into 6 gallon or larger bucket, top up to 5 gallons, stir, get hydrometer reading, add yeast. 3. After 7 to 10 days, siphon to 5 gallon carboy, leaving most sediment behind. 4. After about 14 more days, get a hydrometer reading, and again a couple days later. If the specific gravity is still dropping, wait a couple days and get another reading. When the latest two readings agree, it’s done. 5. Siphon off sediment to a sanitized container (carboy, bucket, brewpot), stir in 3/4 cup sugar, bottle, leave 10 days at room temp for carbonation, then, cool dark storage.
