Mmmm, sounds great! Love that he doesn’t say parmesan, no Italian would say parmesan (why did the French name for parmiggiano catch on in the English-speaking word, anyway?)
I applaud Claire for tasting it even after learning what it was as opposed to judging it based on her “eww pumpkin in pasta” comment. There was one time my mom brought home some sushi, and she said it was eel, and I popped the whole thing in my mouth. My younger sibs wouldn’t touch it, and they missed out on a delicious treat! I always try to be open-minded about food!
My pizza sauce has pureed brocolli for thickening - after thinning the tomato paste with red wine. There is no noticible taste of that with all the tomato, wine and spices (and it’s healthier).
