I never do stuffing any more. I like the crusty bits on the top and sides of the dish that it’s baked in with dressing. You don’t get that with stuffing.
Do as I suggested and make home made stock from your turkey carcass and then freeze it into cubes, or continue to reduce it to almost a paste and can it in a mason jar, sterilized. A small mason jar of concentrated stock will dilute and make enough stock to flavor a large pan of dressing for a big family.
They’d love us! We stopped having turkey 5 yrs. ago . The pigs might hate us though. We use a ham base to make a dressing that is great with fried eggs .

Stuffing and dressing are the same. If it’s cooked inside the bird, it’s stuffing. If it’s cooked in a dish, it’s dressing.
