Putting in some sour cream (I prefer plain Greek yogurt) could make it interesting! Or am I jumping the gun here and about to find out that’s already an ingredient?
Years ago I was making the meat loaf recipe my wife’s grandmother gave to my wife’s mother. My wife’s mom was the hated daughter in law and also, gasp, from Sow Dakoda. The recipe included Lipton onion soup mix. The soup mix packet I was using had a meat loaf recipe on the back. I compared the two. They were identical except that grandma’s recipe had double the bread crumbs. No wonder it always came out too dry. :-)
I like mixing them up too. When I make pot roast in the Dutch oven I use a can of mushroom soup, and a can of cream of chicken soup. And a packet of onion soup mix.

Two cans of tomato bisque and about 1 cup grated cheddar. And a little bit of the cheese sprinkled over the tater tots.

Cream of Celery always seems to give a good flavor. I use it in my tuna casserole…………and, yes, I love tuna casserole.
