Every time I go to a restaurant for breakfast I always order eggs over easy and it never fails that the cook make them over medium. In the military I was not only a cook but a cook instructor, too. The last restaurant I went to I told the waiter that the cook had made my eggs over medium instead of over easy; he told the cook that and the cook said to the waiter, “Those are over easy.” I wanted to get up out of my chair and chew the cook out. It never fails, my over easy ALWAYS turn out to be over mediums!

It took quite a few years practice to flip my omelets. When I first started my omelets were called floor covering.

Her mistake was using a Spatula instead of just flipping the Pan.
That way, you always get Over Easy after you scrape the first 6 or 7 tries off the floor and throw them in the garbage.
