    Why not put it all together? It’s going down the same tube and out the same way. Although, by the time you got the birds stuffed into the birds, there’s not much room for much else.

    When I lived in Florida, I used to order a fantastic Cajun Turducken from the Broussard brothers at Cajun Specialty Meats up in Pensacola, Fl. ( They’ve since changed their business name to Broussard’s Bayou Co. ). They’ll ship anywhere in the U.S.

    Alas, not to Ecuador! I did one, myself, for Christmas a couple of years ago, tasted delicious and got raves from the family, but what a pain in the turducken to make!!

    Can the hen really take all of the sides and dessert? And I’d always thought the dish was ‘tur’ + ‘duck’ + ‘en’, the last part standing in for the word ‘chicken’. Okay, the chicken may either be male or female, but using a non-gender-specific term might make it feel less of a stand-out.
