    After watching the Ted Lasso TV series, I have gained an appreciation for English shortbread. Since Grandma Marian was born in England, her grandkids may be getting the authentic stuff.

    Shortbread is in my cookie jar every day, year round. Simple to make and appreciated by all. Proportions are: butter is half the flour and sugar is one quarter the flour. I don’t bother with rolling out and cookie cutters, I just make a long roll and cut slices off it. Also I use my food processor to make the dough. Whole process takes 15 minutes.

    I made shortbread for the first time last week. 2 and 3/4 cups gluten free flour (by necessity)two sticks of butter, and a cup of powdered sugar. They were wonderful!

    Is grandma of Scottish heritage? My Scots roots told me shortbread originally was made in Scotland, and England adopted it.

    The Mrs is a Scot. Yes, we have shortbread. Sometimes she even lets me try to make it. At least I don’t burn like she does the fry bread.
