All my ‘natural health’ doctors (in person and on line) are saying animal fats are not bad for us, we need them, in small amounts. It’s the highly processes vegetable oils that are bad (except for virgin olive, avocado and coconut oils. Those are healthy).
Lard (and other oil) doesn’t do that. Sugars are the poisons. In the last century, the sugar industry paid good money to foist on you the fallacy that fat was evil and sugar good for you.
Whenever my mom served salted cod, she’d always have melted tallow to put on it. Just watching it on my plate made me wonder what it was doing to my insides.
Lard has less saturated fat, more unsaturated fat and less cholesterol than an equal amount of butter by weight. Unhydrogenated lard contains no transfats. Around the time this particular strip first appeared (2000) the effects of transfats on heart health were beginning to be publicized. In 2004 Denmark was the first country to require labeling on foods containing transfats.

Go to any independent supermarket which caters to the immigrant community and you’ll still see tubs of lard for sale.
