    I have to admit to being a little wierded out at first by how the food seems to float around in my new mineral coated pans. The old Teflon never performed this well. Sometimes however, you do want food to stick to the pan a little bit in order to get a good char for say steaks. For that reason alone, I keep cast-iron in my utensil rotation.

    It may be the best at being nonstick, but it’s not the best at functioning as a frying pan – levitating food does not cook as quickly.
