    My sister gave me an old calendar featuring healthy Native Alaskan recipes. One month the featured recipe was Stuffed Reindeer Nose. Vikings probably have some equally imaginative specialties.

    Well, properly boiled sheep’s head is very good. Andy’s sheep’s head and tofu with rutabagas, on the other hand….

    Smalahove (also called smalehovud, sau(d)ehau(d) or skjelte) is a Western Norwegian traditional dish made from a sheep’s head, originally eaten before Christmas. (Wikipedia so I know it’s true)

    Don’t knock it till you’ve tried it! I don’t know about the viking recipe, but stewed veal’s head in ravigote sauce is a great french delicacy, not to talk about Moroccan roasted lamb’s head. And, of course, don’t forget the good old head cheese…

    I’m not a fan of head cheese (a cheese made with milk and the meat from the head of a pig.) and I definitely don’t think I’d go for the meat from a sheep’s head. (^.^)

    Gotta say, I tried haggis once, and it was utterly disgusting. Yes, I know it’s Scottish and not Viking. I was just making a point about “unusual” dishes.

    I’ve been offered boiled sheep’s head (or maybe it was a goat) and there are few things less appetizing to see staring back at you from the stew pot. But for many of the very poor it makes for a good source of protien making full use of the animal. Sell the good meat and eat all of what’s left.

    I have had sheep’s head many times and would chooce it over broccoli (in any form) anytime. Check Þorrablót in wikipedia and www icelandair com / blog / thorrablot-midwinter-feast / Used to be able to get sheep’s head outside mid-winter too.
