    For some odd reason my late father-in-law saved a large pig’s ear and put it into the freezer when we butchered a hog. I teased him that he was going to make a silk purse out of it, but he didn’t get the joke. The pig’s ear is still in the bottom of the freezer and my father-in-law died in 1981. I see it whenever I clean out the freezer but can’t throw it away. My kids can do it after I’m gone—LOL

    I’ve had pig ear sandwiches, not bad at all. And Pickled pig lip in pepper vinegar as well.

    We had a buffet luncheon company for company lunch times. $3.50 for a plateful. They would have herring that no one would touch and I’d get a plateful. Bargain price. Couldn’t get near anyone after with my breath though, LOL!

    How far South do you have live to find pickled pig ears in the buffet? I lived all along the Gulf Coast for ten years and never saw that dish.

    The real problem here is no one has assigned employees to keep the salad bar restocked throughout the lunch rush.
