In the Bay Area there are a lot of good pizza choices including American regional varieties and more or less true to original Italian. I’m not sure about sushi because raw fish makes me uneasy. I worked in a McDonald’s in the early ’60s when they used real potatoes. They followed the basic French recipe. Soak the cut potatoes in cold water to remove the starch. After drying fry at about 250° till softened. Allow them to cool to room temperature and then fry at 350° till crisp. If all the steps were done correctly they were magnificent.
