@ 3hour, It is too dry to grow mold. Gingerbread for walls inn’t really edible so going organic is a waste. Maybe kids in 3rd world countries would eat it. The one time I made one for a party I made my own stained glass spice candy for the windows, but we still did not eat the walls; the royal icing glue for corners is also too full of cream of tarter for good taste.
