What a terrible way to make hummus! Cheap Thrills Cuisine has an artichoke hummus that is way better. Hummus isn’t supposed to be sweet, it’s supposed to be lemony and garlicky. And there’s not enough of either in this. This isn’t hummus at all.
Oh for…..just call it mock hummus to please the pedant.
have to say carrots are quite sweet though less so with the skins. Artichoke one sounds good will have to look it up. And I agree with Slywlf. Love my basil pesto different with different basil types but also arugula/sundried tomato pesto is killer. All hail sacreligeous cooking!

You can substitute fresh cut grass for the carrots if you want. Tastes just as bad.

I really like hummus. This is an interesting variation. Roasting the garlic would mellow out the usual acrid notes of the raw cloves.
