To 5639 “Animal flesh is 30% fat. Why add butter”. It is mostly done to guarantee a golden brown color to the exterior. Also just because it is fat it still doesn’t have the flavor of butter. One stick of melted butter with 1 tbsp of poultry seasoning and 1 tsp pepper brushed on to the exterior adds flavor and color to the turkey.
