I used to poopah the gluten free craze but then had a grandson that is totally intolerant of gluten. It’s not for everyone, but for some it’s critical.
Until you have to eat gluten free in order to be healthy you won’t understand what we go through. Always the butt of peoples jokes, no one understanding what it means and how sick we can get from eating gluten. Gluten for some is just the beginning of food allergies and some are even more limited. It is a daily struggle to avoid it. Food labels can be so obscure and so it is easier to make everything yourself! Making it all yourself from scratch is very time consuming. Try having to work, pre pandemic going to get togethers, family functions, out to dinner…it causes anxiety! So it is never funny to us and actually hurts us because there are so many people unaware of what it takes to maintain a gluten free diet.
