    Too much wine often makes the sauce a bit sour. A bit of sugar can help balance the flavors. I would have thought that the restaurant would use red wine — gives more body to the sauce.

    It’s only wine. Boil it a little bit more and the alcohol will evaporate. then the wine taste will deminish.
