I always thought GI stood for general infantry.

Wiki says: General Issue or Ground Infantry, but originally it referred to “galvanized iron” used by the logistics service of the United States Armed Forces. The term “G. I.” came into widespread use in the United States with the start of the selective service system the draft in 1940, extending into 1941. It was gradually replaced the term “doughboy” that was issued in World War I.

Story I like to tell Marines and their families: One day my sister and her friends were playing Cinderella with their Barbies. The Prince was one of my GI Joes in his Marine dress uniform.

I thought this was 100% a joke. I googled it and found that G.I. does in fact stand for government issue (or general issue).
