I’m there with you on the olives. Use olive oil all the time, but can’t stand to even look at the nasty little things. Wife loves black olives. I give them to her separately.
Skip the dressing, that’s usually not good for you. If I have a salad, I’d prefer non-purple onions, but can live with them. But give me some protein – boiled eggs, cheese, and/or bacon bits, or I’m not interested. (I’m supposed to have high protein & high carb diet, so most salads aren’t high on my list.)
I used to love carrots when I was a kid – unless they were cooked. I’d eat a raw carrot, but it took time for me to adjust to cooked carrots.
The purple stuff is, I believe, red cabbage. I’ve found that it goes well with salad. Chopped black olives are great in salad!
What really got me eating salad was when my mom (r.i.p.) suggested I try it with thousand island dressing. I’ve been hlatching down salad ever since! And I think it’s the best salad dressing you can ask for.
Seems to me these two are old enough to prepare a meal for themselves if they don’t like what she serves them. Maybe making them pay for the food they use would be an incentive to stop complaining & either eat or go hungry.

Living as a widower I buy salads by the bag, I don’t mind carrots or radicchio, and I prefer bleu to ranch; ranch is the ketchup of salad dressings.

I’m with Tina on the onions and olives in my salad. Carrots and cucumbers I can handle, and of course I gotta have my ranch dressing!
