It wasn’t that margarine was bad, but the dairy industry saw it as a threat to butter sales, and big dairy had great lobbyists. In some states, it couldn’t be sold with yellow coloring already mixed in. Instead, it came with a dye packet and you had to massage it into the unappetizingly white margarine until it was all mixed together.
