It sounded so good I had to look up a recipeSweet & Spicy Pickled Onions
Ingredients1 red onion, thinly sliced1 jalapeño pepper, thinly sliced1 cup rice wine vinegar½ cup sugarInstructionsPlace onion and pepper in medium sized bowl.In small saucepan on stovetop, heat vinegar and sugar until sugar is dissolved and mixture is just starting to boil. Pour mixture over onion and pepper in bowl, stirring to throughly mix. Let sit at room temperature for 1 hour, stirring occasionally.Store in tightly covered container in refrigerator.NotesYou can control the spiciness of the mixture by removing the veins and seeds from the jalapeños. If you want more heat, try using a serrano pepper
